Appassimento


This is not the name of a specific grape but the name of an Italian processing method that is mostly used in Veneto, in northeastern Italy. The grapes are dried, resulting in an intense, concentrated and dense wine. This also increases the alcohol content as the concentration of sugar is higher.

The grapes that are mainly used are corvina och corvinone.
